Making meringues!
They are impossible. I know they are easy but its something I can never ever get right! I thought Id cracked it tonight, whisked up four egg whites, added sugar, spread on parchment and baked until just cracked and chewy, but then for some reason turned the knob on the oven the wrong way- up instead of off and now I have this black smoking crumbly disc thing smoldering in the kitchen! BUM!

No, I can't either. They usually get burned too, but perhaps not that blackened .....
